Wood by it's nature is an evolving medium. However stable looking wood fibres are in perpetual flux, so you have chemical and biological decomposition underway after it has been parted from the tree. Factors like baking hot direct sunlight, damp warm environments, and water submersion most notably speed up the decay the fastest.

A lot of the time the changes appear as fissures and cracks in the objects and effects of subtle weathering breaking down the bonding substrates or decomposing wood on a microscopic biological level.

This natural cycle of decay means that you can't really be sure how an item will age, or anticipate with accuracy how it will decay.
